Points that we do know:

1. It came at a time when cold refrigeration wasn’t possible for Lagering the beer.

2. It was brewed using all American ingredients.

3. It was made using one particular American hop.(Most likely Cluster)

4. Original Gravity’s were between 1.044-1.050.(Just a guideline, Could be more or less)

5. Use all American grains, Go for an American Pale Malt or 2-row.

6. Mashing should be carried out between 152 and 156F.

We also know that fermentation was carried out between 60-62F. It was a beer well suited to Northern California’s climate. The hop levels that were used were between 28-40 IBU’s.

The reason believed for the name “Steam Beer”, Because it was krausened for carbonation will the beer was still fermenting. So this beer was made for quick turn over. The beer was then ran into shallow vats called clarifier’s.

These clarifier’s were 12 inch’s deep, They were long,wide and shallow. 1. To prevent a high rise in temps.

2. To make the beer clear faster.

At this point the beer would ferment between 60-70F. Fermentation was usually complete between two to four days. From the clarifier the beer was racked directly to kegs. At this stage krausen was added. (Clean fresh sweet wort.)

A 15-gallon barrel would get up to 6 gallons of krausen then filled with fully fermented beer. Fining’s also were added to aid in clarity of the fresh beer. The kegs were sealed with Iron Bungs and aged two or three days before shipment to the Tavern.

The beers had to sit for at least two days before being tapped. This would allow the yeast and fining’s to settle. High levels of C02 were reported in writings from the turn of the century.

Values from history tell us between 40 to 70 psi reported. So when the kegs were tapped it would look like “Steam” coming out of the beer. This is why it’s believed that California Common is called “Steam Beer”.

Now a days when this style is made, Anchor Steam comes to mind. Of course it is made from the use of Northern Brewer hops. I say try some of the other variety’s of hops. I just would stay away from the American three C’s.(These would tend to be to citrus for this style.)

A good Pinot Noir looks translucent in the glass and displays fruity sweetness and a gentle, intriguing perfume, with soft tannins. The skin of the grape is thinner than some of the other black grapes (like Cabernet or Syrah for instance) and the taste profile is more subtle. Pinots are elegant and medium bodied where some other reds are bold and rich. From the right vineyard, in a good year with a talented wine maker Pinot Noir can be as expressive as any wine, consistently interesting and appealing, wonderful with food and capable of real improvement with age. Young, it is like a bowl of summer warmed raspberries but with some maturity Pinot Noir takes on complex vegetal, even animal-like scents. A fine, aged red Burgundy from a cru vineyard challenges the taster and defies exact description.

From a wine maker’s perspective, the quandary with Pinot Noir is that the vineyards that bring out the best in the grape are in marginal areas where simple ripening is often difficult. Burgundy in northern France, the Willamette Valley in Oregon, Carneros and higher altitude vineyards in California and New Zealand’s coastal vineyards are all threatened with late spring and early fall cold and rain. Pinot Noir is thin skinned so it is more vulnerable to various vineyard pests and diseases as well as bad weather. If planted in warmer, more generous climates Pinot Noir too often loses its edge of acidity and complexity and yields a simple, juicy wine. So you risk, and maybe make good or great wine or, you play it safe and make simple or average wine.

This translates to expense for you in the wine shop or at your local restaurant. It’s a general rule of thumb among sommeliers that, “good Pinot Noir is not cheap and cheap Pinot is never good”. And, because this particular wine’s best often comes from more difficult environments, vintages can make a big difference in quality.

From Burgundy, keep in mind that Bourgogne Rouge is the most basic level of quality. A so-called village wine, one that bears the name of a specific village in Burgundy (like Volney or Gevrey-Chambetin) is the next step up. These wine are where value can be found and, if you choose a basic Bourgogne made by a good producer you can score a great value. Permier Cru and Grand Cru wines are the very best and they can be quite expensive. They will often have a village name as well as the name of a specific vineyard (like Le Ruchots or Clos de Beze) on the label. Burgundy is all about little vineyards, lots of them, and very fine differences between wines. In Oregon or other places outside France, wines that have a more general geographic identity (like California) will have less distinction than wines with more specific identity (like Willamette Valley or Shea Vineyard). The range of price for Pinot Noir wines can go from $9 per bottle to $250 and more, based upon the reputation of the vineyard and the wine maker and the specificity of the place it comes from. If very little wine can be made from a single vineyard location then it will cost more per bottle. The frustration comes when you open a bottle that should be great to find that fragile, subtle Pinot Noir is missing its elegant finesse.

It’s up to you to judge value. A good working definition of “value” is, the point at which you feel like you’re getting more than you pay for. For some wine drinkers that will be the $11 Carneros Pinot and for others it will be the $25 village-level Burgundy.

The great thing about Pinot Noir is that it is expressive. It does taste differently depending upon its origin, and the vintage, and it is subtle, elegant and charming. It is the perfect wine with game bird because of its earthy undertones, especially an aged Pinot. It’s also a great choice in a restaurant where some are having chicken or fish and others are having red meat, because it is neither weak nor overpowering. Pinot Noir is always a wonderful partner with food and the bottle you buy should be as good as the dinner you’re planing to serve.

It’s really no surprise then, as parents we naturally want to capture and record all those many emotional moments by preserving them in baby book scrapbooks or memory books. This is a great way to safely record and cherish those memories for years to come.

My favorite, yet timeless and extremely popular baby scrapbooking idea is to make an album that consists of baby’s ‘firsts’. This easy and flexible theme is especially simple for someone new to scrapbooking and is a great way to begin creating one of life’s most treasured baby book scrapbooks.

This kind of baby album usually consists of a scrapbook arranged in chronological order (pregnancy to first birthday) with individual page layouts showing babies special and notable moments in life.

You can buy premade baby photo albums, journals and baby book scrapbooks, but I’ve found that in 100% of the cases that there are pages for things baby doesn’t do and missing pages for things your child will do. That said, my very best recommendation is to create your own using kits or digital scrapbook membership sites that make it easy for you to create the perfect baby book scrapbook that is custom to your child’s book of ‘firsts’.

Unlike premade baby books and baby albums, you’ll be able to add a more interest to your custom or digital baby book scrapbook album by varying the themes and layouts. As and example: make some events into double page (side-by-side) spreads; such as coming home from the hospital or their first bath-time, which always presents an opportunity for some great digital photos!

Contrary to the chain letters which circulated at the time, mobile 411 was not, and is not, a publicly accessible list of names, numbers, addresses, or anything. It will remain illegal* for telemarketers to call your cell phone or any pay per use communication device, and they will not have any more access than currently as the result of mobile 411.

So what is it then? Mobile 411 will be a voluntary directory in which owners of cellular devices may opt-in to participate. Some companies will add this opt-in language to the carrier contracts at time of signing, others will simply allow consumers to add themselves. Verizon has declined participation in the directory. Cell phone owners will be available by calling into mobile 411 and asking for a person by name. According to the current plans for the directory - their number will not be provided at that time, but instead the caller will be directly connected to the person they seek.
